Teams are supposed to be competing against teams that has the same number of players, I have 13, however we are competing against teams that has 20 players, how is that fair exactly?

The grouping is based on the same number of racing players. You can check how many players are opted in for the race in their co-op, there is "racing" or "not racing" written next to their names.

The gold star regatta tasks are for the snow ride event, you collect stars while snowboarding down the slope.
